Carbs are my greatest weakness. If I don’t get them at least every 2 days I start to lose it. Too many carbs can also be very, very bad. I have always wanted to try new things to replace carbs but nothing has ever some close to satisfaction of carbs until now. Here are 5 cauliflower dishes that are absolutely unreal to taste and will have you saying goodbye to the carbs and helllooo to the tasty goodness of cauliflower.
1. Cauliflower Nachos
Slice florets of cauliflower to one eighth inch think. Lightly brush with olive oil and bake at 450° for 20 to 30 minutes (or your desired crispiness). Add chicken, steak, pork, cheese, veggies- whatever your heart desires! Great for parties.
2. Cauliflower Pizza
In this healthy, gluten-free cauliflower “pizza” recipe, shredded cauliflower is mixed with mozzarella and oregano to make a flourless crust that has the same texture and taste as pizza. Feel free to try more traditional pizza toppings, such as marinara sauce and mushrooms—even pepperoni.
3. Cauliflower Hash browns
Cook the cauliflower in two tbsp of olive oil. Add one fourth tsp each of smoked paprika and salt, along with black pepper, and three tbsp of water, and cover while continuing to cook until a golden color. Add a clove of garlic and cook for an additional two minutes on lower heat before stirring in two tsp of lemon juice (which will evaporate off quickly). Serve with an egg if you choose.
4. Romano and Herb Mashed Cauliflower
Bake cleaned florets of one whole cauliflower with 4-6 garlic cloves at 350° for 45 minutes. When done, blend in one third cup each of olive oil, cream, and Romano cheese. Ready to serve!
5. Cauliflower Rice
Chop cauliflower into smaller pieces and/or put into a food processor until it is broken into rice like pieces. Add 1 tsp olive oil to a small pan. Add 1 diced shallot or 1/4 cup onion and saute until it is translucent. Add cauliflower rice and cook for 3-5 minutes, or until it reaches your desired consistency. Add any fresh herbs you want, eat with chicken or mix with vegetables.
